Pack a Lunch Tonight; Tomorrow is Brown-Bag-It Day!

Packing a lunch saves not only our money, but also our health. In the spirit of Brown-Bag-It Day, here is a list of our favourite lunches.

Packing a lunch saves not only our money, but also our health. When we’re not prepared with balanced meals and snacks for the day, we may resort to filling up on convenience foods, either from the closest gas station, coffee shop, or fast food restaurant (yikes!). While some of the choices may seem healthy (such as a salad or a muffin) they’re often deceivingly unhealthy, packing refined sugars and high levels of sodium.

In the spirit of Brown-Bag-It Day, May 25, here is a list of our favourite lunches. Many can be prepared on a Sunday and be split into several days’ lunches, many are hand-held for nutrition on-the-go, and all are super easy and nutritious.

  • Crunchy Sweet Potato Salad
  • Almond Pear Sandwich
  • Mixed Bean Salad
  • Salmon Salad on Rye
  • Chickpea Goji Berry Salad
  • Tofu Pitas with Chunky Peanut Sauce
  • Baked Spinach and Potato Samosas
  • Layered Indian Summer Salad
  • Teriyaki Tofu Wraps
  • Quick Curried Chicken Sammie

Don’t forget to pack a lunch tonight—and every night from now on for that matter. Once you get in the routine, it’s really not that hard. I often make enough dinner for leftovers the next day—it’s a no-brainer.

Further, because we care about the environment, we suggest skipping the paper bag (unless you’re reusing an old one) and instead packing your lunch in a reusable lunch bag made from eco-friendly materials or a portable bento box.
